How Flexible Harvest Systems Improve Farm Efficiency

At first glance, harvesting microgreens can seem like one of the simplest jobs on a market garden. But behind every tray is a series of decisions that influence efficiency, product quality, customer satisfaction and ultimately, profitability.

On our farm, we produce a continuous supply of baby radish microgreens. Every harvest offers a question: Do we keep the red and green varieties separate, or do we mix them together?

The answer depends entirely on who we’re supplying.

Our farm supplies a diverse mix of restaurants, retail stores and supermarkets throughout Taranaki. Restaurants order to specific requirements, so those harvests are planned around confirmed orders. Retail and supermarket customers, however, operate on a consignment model, giving us the flexibility to determine the final product mix based on what is available and what looks best.

That flexibility is valuable.

Instead of committing to a fixed process, we can respond to what is happening in the field. We consider how much of each colour is ready, what inventory we already have in the cool room, upcoming harvests, and the needs of each outlet. Sometimes it makes sense to keep colours separate. Other times, combining the vibrant reds and greens creates a product that better suits our retail customers.

These may seem like small decisions, but they are part of a much bigger picture.

Successful market gardens are built on systems that allow growers to adapt. Efficient businesses aren’t just productive—they’re responsive. They create processes that make it easy to adjust to changing demand while maintaining quality and reducing waste.

This is one of the reasons we encourage growers to think beyond simply producing crops. Building resilient farms means developing workflows that connect production, harvest, wash-pack and sales into one integrated system.

When these systems work together, every harvest becomes an opportunity to make informed decisions rather than reactive ones.

Microgreens are a great example of this philosophy. Their fast turnaround allows growers to continually respond to customer demand, trial new ideas and fine-tune production. With the right systems in place, flexibility becomes one of your greatest assets.
